Savory Roasted Nuts


As a fan of keeping my dietary sugar low, and eating good healthy fats, I love eating nuts as a snack.

The challenge is finding nuts in the grocery store that are not roasted in unhealthy oils (like sunflower, safflower, peanut, canola and other vegetable oils).  These oils create inflammation in our bodies and throw off our omega-6 to omega-3 balance.

So I got to wondering about how I could make my own roasted nuts as a healthier option.  I threw together some nuts, oil, and seasonings in a crockpot and I’m super excited to share this recipe with you!

Feel free to experiment with different nuts (raw & unroasted) and seasonings to suit your taste!


Roasted Savory Nuts


4 cups raw nuts (1 cup cashews, 1 cup almonds, 1 cup pecans, 1 cup pistachios)

2 ½ TBSP coconut oil

1 tsp garlic salt

3/4 tsp smoked paprika

1 tsp onion powder

1 tsp sea salt


Turn the crockpot on high (with lid on) and let sit for 25 minutes.  Place coconut oil in crockpot. Once oil is melted, add nuts and seasonings. Stir together to coat the nuts. Place the lid back on the crockpot and reduce heat to low.


Cook on low for 2 hours, stirring every 15 minutes or so.

Remove lid, turn crockpot up to high heat and cook uncovered for about 30 minutes, stirring often.  Don’t let the nuts get too dark. (Smaller nut pieces will cook more quickly.)

Mmmmm! These little heavenly crunches of goodness are really tasty warm, but can also be served cold.


Tip: Once cooled, separate into 1/3 cup servings. This keeps me from eating the whole batch at once! And it’s great to have a grab-and-go snack on hand.
